Maple Sugaring Update: The Sap Is Running!

Our Maple Sugaring class, a time-honored part of our Project-Based Learning program, is in full swing as the warm days and cool nights of March begin. Our team is formed and working hard: Sarah Burgher, Mathias Clark, Emma Cross, Tim deRose, Josh Hyman, Nolan Jeanes, Ben Landry, Connor Palmquist, and (last alphabetically but first in charm) Dylan Woodrow! In February, this solid team finalized the installation of the new equipment, visited a local sugar house for training, and began tapping! Three hundred taps have been placed around town, and our first sap collection was February 28th. While the team has lots to learn as we grow in confidence using our new equipment, we began using the reverse osmosis machine and evaporator, and had our first draw-off of new syrup on Wednesday, March 4!
Keep an eye out as you may see the team continuing to collect sap in the coming weeks which they are transforming into God's Secret Delight. Onward we go!
